Easy Fried Rice for One
Minute® Ready to Serve Rice sponsored this “Easy Fried Rice for One” post, which gives you a quick, on-the-go snack alternative for when life gets busy!
Can we all take a deep breath now that the holidays are over? I don’t know about you, but as much as I love the food-filled chaos from Thanksgiving through New Year’s Eve, I definitely appreciate the “back to normal” routines that come with January.
Even if it means getting back to busy weekdays and multiple after school activities that encroach on the dinner hour.
My daughter, who turns 10 in February, might be the busiest person in our house right now. She juggles school, dance classes, basketball, homework and time playing with friends with great finesse and an insatiable appetite. (Pun intended.)
Often times she only has 15 minutes after school to get ready for the next activity, which makes Minute® Ready to Serve Rice ideal for a quick (portable!) mini-meal or snack because she can add a few easy mix-ins and eat it on-the-go, straight from the cup.
Like this easy fried rice for one, which takes diced mushrooms and a scrambled egg and marries them with a cup of brown rice and a little soy sauce. My daughter loves it!
Bonus: it’s an easy meal for her to make all by herself.
My daughter’s favorite is the Brown Rice, “Because it’s better for you, Mom.” (Related: winning!)
Minute® Ready to Serve Rice also comes in varieties like Brown & Wild Rice and Multi-Grain Medley, Jasmine Rice, White Rice, Chicken Rice Mix, Yellow Rice Mix, and Fried Rice Mix – a little something for everyone.
The whole process for making easy fried rice for one takes about 10 minutes, maybe 15 if you have a slow worker on your hands. Either way, it’s a quick fix!
“Can I make this again soon, Mom??” YES. Yes you can.
It may not look pretty, but I know she felt accomplished AND that it tasted delicious. Looks aren’t everything! (A good reminder for us all, food related or not.)

Looks great Liza! And something my son would eat too. Your daughter did a great job making it.

So easy and so quick! I love that your daughter can make this for herself and enjoys the healthy stuff! Here’s to hoping my little one feels the same way!
