Chicken Fried Rice
Sometimes dinner takes hours to prepare, with meticulous mis en place, fifteen different steps, more pots than burners, and ingredients so expensive you wince at the check-out. Other times, it’s the exact opposite. Like one of our weeknight must haves. A favorite of both my husband and my youngest: homemade chicken fried rice. Its presentation? Messy. Its ingredients? Cheap. Its difficulty level? Easy. Bonus: my chicken fried rice is often made from leftovers. LEFTOVERS. Chicken from a couple nights ago, rice from Sunday dinner, the odd green onion or two left in the crisper drawer. Chicken fried rice is like the “kitchen sink” of dinners, and I love it for that!
Easy Fried Rice for One
This easy fried rice for one is something my daughter loved to eat and make when she was an elementary schooler! Minute® Ready to Serve Rice sponsored this “Easy Fried Rice for One” post, which gives you a quick, on-the-go snack alternative for when life gets busy! Can we all take a deep breath now that the holidays are over? I don’t know about you, but as much as I love the food-filled chaos from Thanksgiving through New Year’s Eve, I definitely appreciate the “back to normal” routines that come with January. Even if it means getting back to busy weekdays with multiple after school activities that encroach on the…
Bratwurst and Shrimp Jambalaya
This bratwurst and shrimp jambalaya is the ultimate comfort food, layered with all sorts of savory flavors and ready on your stove top in a little over an hour. Writing is a big part of my life, but it’s not my livelihood. I actually have a job in marketing for a large company, and I spend about fifty percent of my time in an office without windows. Before you get all, “That sucks, I feel really sorry for you!” on me, don’t. I really love my job, the building and with the people with whom I work, are amazing! I actually have large floor-to-ceiling windows about twenty feet away, just…
Savory Garlic Farro
This savory garlic farro recipe is a perfect alternative to rice or potatoes — simple to make, nutty and delicious! Last Thursday was busy, maybe a little busier than normal even. One of those days where all of a sudden it’s after six o’clock and thoughts about dinner aren’t even a blip on the horizon. My daughter, who spent all evening outside until the lights came on, stopped playing with her friends long enough to ask for chicken noodle soup for dinner. Since my son was at my folks’ for the night, and my husband was busy coaching a lacrosse game (they won!), it was just us girls. And you know…
Quick Pork Chops and Minute® Rice
Serve these juicy quick pork chops with peas and Minute® Ready to Serve Whole Grain Brown Rice on the side. My recipe for quick minute pork chops was created as part of a sponsored post by Minute® Rice! As much as I’d like to use brown rice more, I still haven’t perfected my cooking techniques. It always turns out chewy and underdone. Meh. White rice? No problem; light and fluffy every time. I hear making amazingly tender brown rice is as simple as rinsing it well beforehand, and then cooking it French-style, in a big pot of salted boiling water and draining it after about forty minutes. You know, like…
Easy Oven Fried Chicken Breast Halves with Perfectly Crispy Skin
This is a sponsored post written by me on behalf of Minute® Rice. Easy weeknight dinners are key in this house. Combine a crispy oven fried chicken breast with rich, nutty brown rice, and veggies from the garden and we’re happy campers! If you asked me whether or not I meal plan, my answer would be, “No.” It’s less the idea of sitting down and thinking of fun meals to make ahead of time, and more the fact that I (and really the family) have cravings some days and not others. Why play for pasta when everyone feels like tacos? But I suppose the idea that I don’t meal plan…
Sweet Whole Grain Rice Pudding
This easy whole grain rice pudding is rich and creamy! Creamy, sweet rice pudding. A favorite of restaurants and grocery store salad bars alike. I’ve never attempted to make it myself, but I do love pudding, and rice is the kind of thing you always seem to have extra of after cooking dinner. I had a box of instant whole grain brown rice in the pantry and one evening, while pondering how to quench my sweet tooth, my mind leaped to something other than a chocolate chip cookies or brownies go-to. How about rice pudding? You can use leftover rice from a meal earlier in the week, or there are even…
Garlic Cilantro Rice {Like Chipotle}
Do you like Chipotle? Okay, silly question. Who doesn’t like Chipotle? No denying, Chipotle has become a big contender in the fast-food market over the past couple of years. Just ask any of the 50 people that are always waiting in line for a burrito. Is there ever not a line? Seriously. Anyway, one of the unsung heroes of their burrito – and especially their burrito bol – is the rice. Seasoned to perfection, with just the right amount of garlic and cilantro. I wanted something similar at home. Because, who wants to wait in a line with 50 people? (By the way, smart people call their order ahead, and…
