  • I got a treat from The Tender Filet: steaks!

A Treat from The Tender Filet

Check out our experience with steaks from The Tender Filet! We like our meat and potatoes in this house. Obviously we don’t eat like that all the time, but we haven’t cut that sort of food out of our diets either. Protein is good for you; fats are necessary for vitamin absorption. Carbs in moderation are fine. In fact, “Everything in moderation, including moderation,” by Julia Child, is a quote I like to live by. Although these days, the including moderation part is a little tighter than when my metabolism worked more efficiently. We eat red meat about once a week in the form of meatloaf, meatballs, stew, slow cooker roast,…

  • This easy slow-roasted beef rump roast will become a favorite for Sunday dinner.

    Slow-Roasted Beef Rump Roast

This easy slow-roasted beef rump roast will become a favorite for Sunday dinner. For a number of years my in-laws gave us a quarter cow as a “family” Christmas present. We’d get freshly butchered beef — ground, steaks, roasts, cubed, you name it — the deep freezer is stocked, and for the most part we’re able to eat off of it all year long. Most of the roasts do well in the slow cooker, which I love. There’s nothing easier than throwing everything into one pot, setting the timer for eight hours, and then forgetting about it. But sometimes I have a weekend that’s not so busy. One where I…

  • In a day when some restaurants seem to go out of their way to create novel cuisine, Lawry’s takes pride in presenting a simple meal in an extraordinary fashion to create a memorable dining experience.

Experiencing Lawry’s The Prime Rib: Chicago

Today’s guest post is written by a friend and colleague of mine; we know each other through our day jobs, but both appreciate a fine meal and the experience around it. On a recent trip to Chicago I saw Tommy mention a few different foodie destinations planned, and asked him to write about one of them as a guest post for the blog. He said, “Absolutely!” and so here you go. Cheers! While I will admit that red meat is hardly the most creative cuisine available, there are times when a large slab of beef is the perfect centerpiece of a great dinner. A recent trip to Chicago with my…

  • Simple Mexican ground beef casserole just out of the oven.

    Simple Mexican Ground Beef Casserole

This ground beef casserole is a quick and easy weeknight, family-friendly dinner that marries the flavors of tacos with seven layer dip. And cheese … ALL THE CHEESE! Seems like we can never have enough ways to cook ground beef in our house, especially since I keep a stock pile in the freezer. Tacos with homemade taco seasoning, meatloaf, easy enchiladas—we eat ground beef at least once a week. This particular casserole is kind of like marrying crunchy tacos with a seven layer dip. It only takes fifteen to twenty minutes to sauté onions and garlic with the ground beef, but the resulting savory layers of flavor is worth it—and…

  • I happen to love a good meatloaf, especially with mashed potatoes and maybe some gravy.... YUM! Here's the recipe that your grandma probably didn't make (not that I'm sayin' Grandma's meatloaf was the dry slab I mentioned earlier, but there has to be a reason so many people hate it). I think it's time you revisit this retro dinner entrée!

    Cheese Stuffed Meatloaf

This cheese stuffed meatloaf is a total comfort food. You’ll be coming back for seconds! Meatloaf conjures up thoughts of slabs of bland, dry ground meat for most folks. Even at dinner the other day with friends, one said, “Meatloaf on the menu? Really?” Guess what. I happen to love a good meatloaf, especially with mashed potatoes and maybe some gravy… YUM! Here’s the recipe that your grandma probably didn’t make (not that I’m sayin’ Grandma’s meatloaf was the dry slab I mentioned earlier, but there has to be a reason so many people hate meatloaf). It’s one of my kids’ favorite meals these days. Not joking. The meatloaf itself is juicy…

  • Slow Cooker Corned Beef and Cabbage

Slow Cooker Corned Beef and Cabbage

Corned beef and cabbage is a quintessential St. Patrick’s Day meal, but I’d argue it can be enjoyed any time of the year! Yum! Despite only making corned beef and cabbage once a year (and sometimes never), it’s easily one of my favorite meals. Seriously. Tender, fall apart meat. Silky soft potatoes, carrots, and cabbage that blend together like magic (especially when slathered with topped with a little butter). And the leftovers. Mmm… This recipe starts out in the slow cooker, which I love because it’s so easy and makes the meat super tender (I need to play around with converting it to my Instant Pot, though … that would be even…

  • These easy enchiladas, covered in cheese, are perfect to make for a weeknight.

    Easy Enchiladas

These easy enchiladas are quick to make and can feed a crowd. There are some dishes I’ll claim to be authentic with, and others where I’ll admit that I’ve taken liberties. Last night’s dinner? I call them “enchiladas” but anyone from Mexico, where enchiladas originated, would probably laugh at my attempts. One day I’ll come up with a better name, but for now I simply call them: easy enchiladas. Prep is simple. Just brown ground beef with onions, garlic and seasoning (packet or homemade taco seasoning), and then roll it up into tortillas.  A good slathering of enchilada sauce and cheese, then the oven does the rest of the work…

  • Cast iron roast beef with gravy is best when you make sure to get a good sear on all sides to keep it nice and juicy!

Cast Iron Roast Beef and Caramelized Onions with Gravy

I often find deals on an eye of round roast at the grocery store, which is perfect to make cast iron roast beef with gravy. Think: Nearly three pounds and under nine dollars! Eye of round is an interesting cut, meant for roasting in the oven and served in slices — similar to a beef tenderloin — but very, very lean. Kind of a “poor man’s” tenderloin. When you have a cut of beef that lacks fat, like eye of round, you run the risk of tough and chewy meat … no one likes that. So, there was a recipe I found from The Neely’s that looked like it could…
