• Poached Egg in a Mug

    Poached Egg in a Mug

It’s true that moms have a special way of making everything feel better when you’re a sick kid. My mother would make us a poached egg in a mug, with buttered toast alongside, as a recovery food when we were under the weather. There was something about that sick meal that always tasted perfect and settled flawlessly in our bellies, and she never made it any other time. Eating this poached egg in a mug was a ritualistic process. We’d first rip the toast into small, buttery bits and then mix it in with the over-easy poached egg. Then we’d slowly savor the delightful combination from the comfort of the…

    Collecting Fresh Farm Eggs

My faithful readers are well aware that my parents have a flock chickens on their small farm, and most weeks I’m able to get a dozen fresh farm eggs to stock our fridge.   If you’ve never had eggs directly from a local farm, you’re missing out. They’re nothing like the eggs you buy at the grocery store, which makes you wonder about those store-bought eggs (and perhaps even a little frightened).   Real eggs, as we’ll call them, are produced in a variety of different colors ranging from white to pale blue to light beige (and a rainbow of colors in between), and some of them are speckled. They’re…

Spinach, Bacon, Egg and Cheese Breakfast Casserole

This spinach, bacon and egg breakfast casserole is a great make-ahead meal to serve for breakfast on a holiday or vacation morning! Because, on the one hand, casseroles that you can throw together the night before make life really simple the next morning. On the other hand, there are some mornings where a casserole sounds really, really scrumptious, but you didn’t have the foresight to prepare one the night before. Granted, there are a few “day of” casseroles that work out okay, like this Walnut French Toast Bread Pudding Casserole that I whipped up on a whim one Saturday morning. But most of the time egg casseroles with any sort of…

  • Omelette made with cheese, spinach and lump crab meat and served with buttered toast.

Fresh Spinach and Lump Crab Meat Omelettes

Breakfast for dinner can happen on a special occasion too — like these fresh spinach and lump crab meat omelettes! When the kids were little, my husband and I typically spent most of our Valentine’s Days at home. It can get complicated to find a babysitter, especially on a school night, and sometimes the hassle of securing a reservation on a night packed with other restaurant-goers just doesn’t seem worth it. Instead I’d splurge a little at the grocery store and after the kids were in bed — you know, the days when bedtime was six thirty or seven in the evening — we’d eat something a little fancier, just the…

  • These chicken and asparagus omelettes are so easy to make!

    Chicken and Asparagus Omelettes

These chicken and asparagus omelettes are so easy to make! The challenge? Use Tyson® Grilled & Ready® Chicken in an original recipe. Sounds easy, right? I thought so too. But, I didn’t want to just make a simple pasta, or use it to dress a salad. I also didn’t want to go way out-of-the-box with my recipe, so no chicken-scented ice cream or vanilla cupcakes with candied chicken frosting here. You’re welcome. I did, however, think about what I currently have in my refrigerator, which includes fresh farm eggs, asparagus and field greens. And that, my friends, made my decision quite simple. Let’s have breakfast for dinner! Here are some kitchen tools…

  • Out and About: Harry’s Main Street Grille

I had a downtown breakfast meeting in Westminster, Maryland, yesterday at Harry’s Main Street Grille. From the outside it looks like part of the Main Street renovations, newer facade with fresh paint and a contemporary sign. On the inside the feel is more…diner.  I like diners though, especially for breakfast. And Harry’s had a short and simple breakfast menu  with one of my favorites: Eggs Benedict. I never make that at home, and when I eat out I like to get meals that I wouldn’t typically cook at home, so Eggs Benedict is often a contender if it’s on the menu. Eggs Benedict from Foodspiration.com And Harry’s Main Street Grille?…

  • Musings: Eggs & The Recall

It seems like every other news report this past week has been about eggs and the massive recall from a couple of the largest egg producing factories in the United States. Scary stuff. Makes me glad to know where our eggs come from, but even if we didn’t know our egg layers personally (and we do), I know where we’d be going to get our next dozen: our local farmer’s market. Small scale farmers know their chickens and if you’ve never tried a fresh egg before you are missing out my friends! And, while we’re on the topic of eggs, I’d like to look at the difference between the types of…
