The garden is starting to produce LOTS of goodies right now: kale, gooseberries, black raspberries, peppers, tomatoes, cucumbers, peas, onions and more!

After spending time picking a bagful of berries and veggies this afternoon, my youngest announced he wanted to make a smoothie out of our haul.

We’re big smoothie fans over here.

So, once the picked produce was analyzed we determined a berry cucumber yogurt smoothie was in order.

It sounds a little bizarre, I know. Cucumber and yogurt… 

Well, cucumber and yogurt go together well in tzatziki, and who doesn’t love that?

Mmm…

But, with berries? I mean, why not. Between black raspberries, strawberries and other assorted berries, it’s hard to go wrong in smoothie-land.

That said, what about gooseberries?

Gooseberries aren’t quite as prevalent in gardens all across America, or even in the grocery store or supermarket. My folks happen to have a giant bush on their property in Maryland, and gooseberries are most common in the Northeast and upper Midwest, as well as up into Canada.

If you’ve never tried one, gooseberries are tender with a grape-like texture and a sweet/sour flavor, adding a little *zing* to recipes with other super sweet fruits, or even delicious all by themselves in desserts like gooseberry pie.

Obviously black raspberries and strawberries are a no-brainer as part of the smoothie mix.

So, into the blender went black raspberries, gooseberries, cucumber, frozen strawberries (from earlier this month), strawberry banana yogurt and a splash of whole milk.

Because we used frozen berries, we didn’t need any ice, but if all your ingredients are fresh, then you’ll want to toss in a handful of ice before blending.

*Whrrrrrrrrrrrrrrr*

I’m not lying when I say this combo was as yummy to slurp as it was beautiful to gaze upon.

Sweet, but naturally so—with a slight *kick* from the yogurt that was a little tart, but not enough to make you pucker.

A fun snack or breakfast treat!

Ingredients

  • 1 cup black raspberries
  • 1 cup frozen strawberries
  • 1/2 cucumber, diced
  • 1 8-ounce container yogurt
  • 1/4 cup whole milk
  • 1/2 cup gooseberries (optional)

Instructions

  1. Place everything into a blender
  2. Blend on high until it's smooth.

Notes

If you don't have any frozen berries, it's fine to use all fresh. Just add a handful of ice cubes before blending. Easy fix!
