We eat a lot of pizza in our house.

Sometimes that pizza’s homemade and other times it’s delivery or pick-up.

I even keep a Tombstone in the freezer for those times we want a late-night snack or an easy dinner that requires minimal effort.

There’s no wrong way to do pizza. (Bad pizza exists, yes, but you know what I mean.)

There is, however, one very right way to do pizza, and that’s by making your own homemade pizza dough.

Homemade pizza dough is really simple to make and very forgiving.

For example…

I’ve substituted whole wheat flour for all-purpose flour, and even used a blend of both.

I’ve let it rise for an hour and then baked my pizza, and I’ve also let it rise a few times over the course of a couple hours.

I’ve also used the dough immediately, as well as frozen it for use later.

There’s really no excuse not to have homemade pizza dough on hand!

My recipe works just as well for thin crust, as well as thick crust or a more traditional crust.

And when it comes to getting the pizza dough ready for the pan, no matter the thickness, I prefer to skirt the “expert” way of hand-tossing the dough.

Instead, I use a floured rolling pin to roll my homemade pizza dough out to the thinness we’re looking for, and then transfer the rolled out dough to the pizza pan, where I then add sauce, cheese and toppings, before popping it into a hot oven.

I used to use a pizza stone, but find it more complicated these days to top the dough and then transfer to the stone, even with copious amounts of cornmeal, breadcrumbs or semolina to help keep the pizza dough from sticking.

Plus, a pizza stone needs to be preheated at the same time as the oven, so there’s no ability to build the pizza right on it.

If you’re a toppings-fiend like me, transferring topped pizza dough from one surface to that hot stone in the oven can make for a big mess, as pieces of mushroom, peppers, and even cheese inevitably fall on the floor — or worse — the bottom of the oven.

So.

Pizza pan it is! And because I use a really hot oven, the pizza crust still turns out a nice mix of crispy and chewy.

Easy Homemade Pizza Dough

Yield: 2–3 large pizzas (or 6–8 personal pizzas)

This easy homemade pizza dough makes soft, chewy crusts every time—perfect for family pizza night! Ready in 90 minutes with simple pantry ingredients.

Ingredients

  • 1 packet (2 ¼ teaspoons / 7g) active dry yeast
  • 1⅓ cups (315ml) warm water, about 110°F (45°C)
  • 1 teaspoon sugar
  • 3½ cups (440g) all-purpose flour
  • 1 tablespoon salt
  • ¼ cup + 1 tablespoon (65ml) extra virgin olive oil

Instructions

  1. Prep oven for rising: Move the oven rack to the lowest setting. Preheat oven to 170°F (75°C), then turn it off.
  2. Activate yeast: In a stand mixer bowl, combine the yeast, sugar, and warm water. Let sit for 5–10 minutes until foamy.
  3. Make the dough: Add flour and salt. Using the dough hook, mix on low for 1 minute. Slowly drizzle in ¼ cup olive oil, then knead with the mixer on medium-low for about 8–10 minutes, until the dough is smooth and elastic.
  4. First rise: Remove the dough, form it into a ball, coat lightly with the remaining 1 tablespoon olive oil, and return to the bowl. Cover with a towel and place in the warm oven. Let rise for about 1 hour, or until doubled in size.
  5. Shape & use: Punch down the dough. Roll out into 2–3 large rounds or 6–8 individual pizzas. Add sauce and toppings as desired.
  6. Bake: Transfer to a hot pizza stone or baking sheet. Bake at 450°F (230°C) for 12–15 minutes, until the crust is golden and cheese is bubbly.

Notes

  • Yield: Makes enough dough for 2–3 large pizzas or 6–8 personal pizzas.
  • Storage: Store in the refrigerator (covered) for up to 3 days.
  • Freezing: Divide into portions, lightly coat with oil, and place in freezer bags. Freeze for up to 3 months. Thaw overnight in the fridge, then bring to room temperature before rolling out.
  • Variations: Mix in 1 teaspoon garlic powder, dried oregano, or Italian seasoning for a flavored crust.
  • Family tip: Let kids shape their own mini pizzas—it’s messy fun and keeps them invested in dinner!
