Yesterday was a crazy-busy work day for me, and consequently lunch didn’t happen until late in the afternoon, and I didn’t make it home until after 6 p.m.

My days aren’t always this way, but they are frequently busy once I’m home with shuffling kids around, making it to board meetings, or attending book club.

I don’t mind at all; such is life with a family of four, and kids who are getting older. Plus, even though it was a busy, late day, I love my job and the work is satisfying.

Some days like this call for take out or delivery.

Other times I’ll make pasta or grilled cheese—things that take less than thirty minutes, and a minimal amount of brain power, to pull together.

One of our favorite quick dinner go-tos, though, is this: breakfast for dinner.

Breakfast for Dinner

I’ve loved breakfast for dinner ever since I was little, and I’m not sure there’s a kid out there who doesn’t.

Whether it’s pancakes, waffles, crêpes, omelettes, fried eggs, or just. plain. cereal, sometimes there’s nothing better than breakfast for dinner.

What a treat, especially as a child, when having something like eggs after 10 a.m. seems almost, well, bad! But really, it’s oh-so-good. Mmmmm…
