Can we all take a deep breath now that the holidays are over? I don’t know about you, but as much as I love the food-filled chaos from Thanksgiving through New Year’s Eve, I definitely appreciate the “back to normal” routines that come with January.

Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes

This easy fried rice for one is something my daughter loved to eat and make when she was an elementary schooler!

Ingredients

Instructions

  1. Set a small non-stick or cast iron skillet over medium-low heat and add the butter. Whisk the egg and salt together in a small bowl.
  2. Once the butter has melted, pour the egg and the mushrooms into the skillet and use a non-stick spatula to gently stir them, folding them over a few times until they're just cooked through (about a minute). Remove them from heat.
  3. Meanwhile, prepare the Minute® Ready to Serve Rice according to package instructions.
  4. Once the rice has finished cooking, add the soy sauce and the egg mixture to the cup, then stir to combine!

We used Minute® Ready to Serve Rice brown rice, but you can choose your favorite variety.
