Avocados might be one of my very favorite vegetables. And by “vegetables” I actually mean fruit. Because, you know, they’re actually not a vegetable at all.
From baby’s first food (times have changed since those of us with older kids had babies and shoveled icky, bland cereal as a first food into their little mouths) to creamy guacamole, or a sandwich topper, avocados are incredibly versatile and super good for you.
Avocados also happen to be one of the few vegetables…erhm…fruits that my husband will eat. Actually, I’m not giving him enough credit. Since our first meeting 12 years ago, hubs’ vegetable intake and appreciation has increased leaps and bounds, but avocados were definitely one of his early [new] favorites.
They’re just plain delicious, that’s all there is to it.
