When I am not cooking, I am enjoying home life with my beautiful little family. My husband, Steve, loves most of my culinary creations, and our beautiful daughter, Delainie, will hopefully soon get to explore them for herself. I had a career before our daughter blessed our lives, but she was born with several special needs and my new calling is to be home with her. I love to spend time cooking in the kitchen while she watches in her highchair. I often put on my own little cooking shows when it’s just the two of us in the kitchen. Easy Weekend Breakfast or Quick Weeknight Meal, have it your way!
Ingredients
Bisquick or other biscuit/waffle mix (NOT the just add water kind)
2 egg whites (whipped ’til slightly stiff peaks form)
1 teaspoon of cinnamon or 1/4 teaspoon of nutmeg (your preference)
Non-stick Spray
1 bag frozen peaches
1/4 cup water
1 cup heavy whipping cream
2 teaspoon vanilla (divided)
2 tablespoon sugar (divided 1/2 tablespoon and 1-1/2 tablespoon)

This recipe would be a great way to use those over-ripe peaches you end up having in the summer. I buy peaches at the farm stand and before I know it they are too ripe and I end up making peach cobbler, because that is quick and easy. Now I will have a new way to use those peaches! Yeah! And I have a waffle iron.
