Guest Post: Fruit and Cream Waffles

I have always had a passion for food and that passion fueled my creative cooking. As a kid, and still today, I love recipes that have pictures! I am not the biggest fan of cookbooks without pictures. I guess it’s my right brain tendency, to need visuals. I still have the “American Recipe” cards I ordered when I was about 10 years old!  Each card displays a pretty picture of the finished products. These days, I follow recipes less and less.  But, I still enjoy perusing the recipes and noticing how some recipes pair different ingredients together. I like to experiment with foods on my own now more than ever. I often use recipes as guides and add my own flair. I have also started slowly developing my own repertoire of recipes.


When I am not cooking, I am enjoying home life with my beautiful little family. My husband, Steve, loves most of my culinary creations, and our beautiful daughter, Delainie, will hopefully soon get to explore them for herself. I had a career before our daughter blessed our lives, but she was born with several special needs and my new calling is to be home with her. I love to spend time cooking in the kitchen while she watches in her highchair. I often put on my own little cooking shows when it’s just the two of us in the kitchen. I hope you enjoy some of the recipes I share with you, feel free to add your individual flair!! 



Easy Weekend Breakfast or Quick Weeknight Meal, have it your way!

Fruit and Cream Waffles



Ingredients
Bisquick or other biscuit/waffle mix (NOT the just add water kind)
2 egg whites (whipped ’til slightly stiff peaks form)
1 teaspoon of cinnamon or 1/4 teaspoon of nutmeg (your preference)
Non-stick Spray
1 bag frozen peaches
1/4 cup water
1 cup heavy whipping cream
2 teaspoon vanilla (divided)
2 tablespoon sugar (divided 1/2 tablespoon and 1-1/2 tablespoon)


Directions

Mix up a batch of the waffles per the package directions. Add cinnamon or nutmeg. Fold in the egg whites, gently.
  

In the meantime, place peaches into a sauce pan with about 1/4 cup of water. Heat up peaches and then add 1-1/2 tablespoons of sugar and 1 teaspoon of vanilla and bring to boil, simmer until the liquid reduces and thickens. If it does not thicken, add a second tablespoon of sugar. Set aside.

Place cold, heavy cream in a bowl. Add 1 teaspoon of vanilla and 1/2 tablespoon of sugar. Vigorously whip until the consistency of whip topping. Set aside.

On a hot, sprayed waffle iron, add the waffle mix by ladle-full. Cook approximately 3 minutes, or until waffles are golden and easily pull away from the iron.

Serve waffles warm with peaches on top, then a dollop of the whip cream and a sprinkle of cinnamon or nutmeg. Enjoy!


Note:

This is a breakfast meal we made when we did not have time to make our “famous” from scratch waffles but wanted the same taste. Adding the stiffened egg whites helps to get that “from scratch” feeling. It makes these waffles lighter and crispier than the result you get when you just follow the package directions. It is just a simple addition and sometimes that is what we want most in the kitchen, simplicity, especially before we have had a full cup of coffee!! We enjoyed these waffles in our pj’s on Saturday morning with a hot cup of joe and some crispy turkey bacon.

  3. This recipe would be a great way to use those over-ripe peaches you end up having in the summer. I buy peaches at the farm stand and before I know it they are too ripe and I end up making peach cobbler, because that is quick and easy. Now I will have a new way to use those peaches! Yeah! And I have a waffle iron.
