Out and About: Acacia Fusion Bistro

Eating out is one of my favorite things to do with friends – time well spent, catching up and chatting over plates of food that none of us had to prepare ourselves. We’re able to focus on each succulent bite and simultaneously enjoy each other’s company.

Tonight two good friends and I ate at Acacia Fusion Bistro in downtown Frederick, Maryland.

What a treat! From the jovial waiter who was attentive and conversational (without being too intense), and the historic bistro-style décor, to the little surprises like citrus-y tuna ceviche sent complimentary from Chef Ric.

We had a wonderful time, and our meals – each very different – were unique and unforgettable. 


I think it’s impressive that Acacia buys most of it’s meat and produce from local, Frederick County, farmers. And in addition to that, the chef changes the menu seasonally…sometimes daily. Plus, the chef is happy to make any vegetarian dish vegan, and has the ability and willingness to prepare gluten-free meals as well! I wanted to call one of my other friends right from the dinner table to tell her, “Your son can eat here – they can make gluten free meals!” since it’s a struggle for her family to eat out. I made a note to tell her today.

I’m beginning to wonder, IS there a restaurant in Downtown Frederick that I don’t or won’t like? Acacia was another win in my books, although I should have known – its sister restaurant is another favorite of mine: Isabella’s!
